Vegan Gourmet Recipe Mailing List

Like many things on this site, the Vegan Gourmet Mailing List has been done before. This time it was a Tofubandit who ran a list a few years ago. As is so often the case, Windows crashed continually, until the list of email addresses that had subscribed to Gourmets was gone...

Now the Tofubandits are too busy doing other things to build up the Vegan Gourmet Recipe List again - so if you have a recipe send it in, and we promise to put it here on this very page gourmet@tofubandits.org.uk

Hot Cross Buns

traditional British treat for the easter season



   500g wholemeal flour
  50 g soya flour
  1 teaspoon cinnamon
  1 teaspoon mixed spice
  50g vegetable margarine
  25g fresh yeast or 2 teaspoons dried yeast
  25mg vitamin C tablet, crushed
  125ml soyamilk diluted with 125ml water, warmed
  2 tablespoons golden syrup (or maple syrup)
  75g sultanas
  75g currants
  50g raisins
  pastry trimmings for making crosses
  1 tablespoon boiling water

Combine flours and spices then rub in margarine.
Dissolve yeast and Vitamin C together with 1 tablespoon of sirup in the warm soya milk/water solution. Mix with the dough.
Knead thoroughly, cover and leave for 10 minutes.
Work in the dried fruit. Divide the dough into 15 portions. Roll into balls and place on greased baking trays.
Cover and leave in warm place for one and a half hours or until doubled in size.
Preheat oven to 230 C, gas mark 8.
Roll pastry trimmings into long strips, cut them up and make crosses on the buns.
Bake the buns in the preheated oven for 15 minutes or until nicely browned.
Remove buns from oven and throw away the pastry crosses. Dissolve the remaining sirup in the boiling water and brush the hot buns with it.
Leave to cool on a wire rack.
